El mejillón es este molusco que distinguimos por su característica concha ovalada y de contorno triangular de color oscuro. Está reconocido como uno de los moluscos más famosos del mundo. Los romanos fueron quienes los introdujeron en nuestra dieta, además, empezaron también a producirlos en granjas y criaderos, para explotar este manjar. Desde entonces es muy habitual el cultivo industrial de este molusco, ya que vive en colonias sobre zonas rocosas.
Este animal, se dedica a filtrar el agua, se alimenta de fitoplancton o de materia orgánica en descomposición, por lo que su cultivo no es complicado. Aunque a veces podemos encontrar bacterias, ya que se debe de criar en aguas limpias, para que su calidad sea óptima.
Las zonas típicas donde se crían estos moluscos son las costas gallegas, la mediterránea, la costa oeste francesa y la costa de Países Bajos. Aunque también podemos encontrar otra variedad en algunos ríos y embalses españoles. Aunque en general, la producción que destaca sobre el resto es la gallega, que además destaca por ser criados en zonas naturales y orgánicas, que le suma beneficios nutricionales.
